Chef Carmen’s take on classic Middle Eastern shawarma features tender chunks of slow-cooked chicken thigh glossed with a rich, tangy sauce made of red pepper and tomato pastes, lemon juice, and plenty of spices. It’s hearty, not heavy, and goes perfectly over rice or pita.
