Making Syrian Hummus & Baba Ghanoush - an Eat Offbeat cooking class at Atelier Jolie

Hummus was the recipe that started Eat Offbeat. When co-founder Manal first moved to the US, she could not find any version available in New York that reminded her of home. She began making and serving the version passed down from her Syrian grandmother from Aleppo. 

Chef Diaa, who is also Syrian from Damascus, has perfected the art of making the silkiest Hummus which he has been cooking almost daily for 30 years.

Baba Ghannoush is one of the Middle East's most famous dips. Roasted eggplants, yogurt and tahini come together to form a creamy dip that works with anything from crackers to crudités to triangles of pita.

Chef Diaa began his career as a chef at the age of fifteen when he began to be the disciple of his uncle who owned one of the best restaurants in Damascus, receiving culinary lessons from him. Chef Diaa is renowned for his delicious Hummus, Mujaddara and his exquisite shawarma that has delighted so many.
