About the Chef

Chef Gladys Shahtou is the founder of Sambuxa NYC, a culinary venture that introduced New Yorkers to the rich flavors of Sudanese cuisine. Seeing an opportunity to share her heritage, she began crafting sambuxas—crispy, savory pastries with distinctly Sudanese fillings—that quickly gained a loyal following. Through outdoor markets, catering events, and international showcases, Chef Gladys shares the vibrant taste of Sudan while fostering cultural connection one plate at a time.
